Mothers Day & Chicken Schnitzel...2011...

Most families take mum out for mothers day...this year junior decided he would cook at home for mum...turned out pretty good....Chicken schnitzel..went to the market with him to pick out 4 chicken breast..parsley, brinjals, tomatoes and capsicum..
..the chicken breast...sliced thinly..3 cm thick..then tenderise...

...dunk it into some flour...drown it in egg yolk...

..pick it up..rinse off the yolk and then roll it in the mixture of parsley, bread crumbs and basel...all ground together

...and get it ready for frying...

..with little oil and slowly...

..made for a nice, healthy white meat meal...by the way the sauce over it was from the bottle with the usual home mix of ???....overall it took around an hour all in, start to finish...the tomatoes are raw but the binjals were grilled with butter...

not bad....we are a family of three and 4 breasts are a bit too much...but it went well for the next days sandwich lunch...
